Homemade Beef and Potato Pasta Sauce

Fall is approaching!

It’s time to get out the herbs and spices and try out warming recipes! We’ve got the perfect pasta dish that goes like a dream with our Tifeo Rosso wine. This spicy red wine with its deep layers of dark fruit and wash of lively minerality is the ideal match for pasta with a tangy tomato-rich, herby, beef and potato sauce. So let’s get to it and create a little bit of Italy for your table!

One thing we love about Italian dishes is they’re so simple to make but mind-blowingly delicious and this recipe is no exception. All you need is:

For the sauce

  • 1 diced onion
  • 2 pounds of ground beef
  • 1 diced potato
  • 1 tablespoon of olive oil
  • 3 cloves of crushed garlic
  • 1 teaspoon each of dried basil and oregano
  • 2 teaspoons of salt
  • ½ a teaspoon of dried red pepper
  • ¼ cup of flour
  • 28 ounces of tomato sauce
  • 1 cup of beef broth
  • 1 cup of heavy cream
  • 2 cups of diced Cheddar cheese

For the pasta

  • 1 pound of rotini pasta
  • water to cook the pasta

For ultimate enjoyment

  • A glass (or two!) of Tifeo Rosso

How to prepare

To prepare this dish, simply heat up the oil in a pan then add the diced onion and cook for a couple of minutes before adding the beef and mixing. Add the garlic, dried herbs, red pepper, salt, and flour and give them a good mix on medium heat. Next, blend in the diced potato, tomato sauce, and beef broth, and simmer until it’s bubbling nicely and all the flavors are soaking in. Now it’s time to turn down the heat on your sauce and prepare the pasta. Add the rotini to boiling water and cook like a true Italian until al dente (a little bit firm). When done, return your sauce to the heat and complete the finishing touches by stirring in the cream and the pasta. Finally, sprinkle the Cheddar over the sauce and blend in slowly. Presto – you have an easy, delicious, healthy dish that’s perfectly paired with Tifeo Rosso – and the fall!
