Pesto Caprese Salad



This salad is breathtakingly gorgeous when made with heirloom tomatoes, yet it will still be delicious regardless of the tomato chosen. Drizzle a simple pumpkin see pesto over fresh creamy mozzarella and sweet tomatoes to add a bright pop of flavor to every bite. Basil is sweet, spicy, and as fragrant as it is flavorful. Using pesto instead of just leaves for the Caprese pushes the overall flavor up a notch and ties the salad together. The Feu D'o Bianco is a perfect pesto caprese salad wine pairing, as it adds a bright salinity to the meal.

Tasting notes - Feu D'o Bianco

Feu D'o Bianco has a straw-yellow color with golden hues and is characterized by intense tropical fruit aromas, such as pineapple, melon, passion fruit, and ripe peach. Intoxicating notes of basil and thyme lend panache and elegance to this blend with rich and eveloping flavors. 


  • 4 large heirloom tomatoes
  • 2 balls of fresh mozzarella cheese
  • 4 sprigs fresh basil


  • 1 cup fresh basil leaves
  • ¼ cup pumpkin seeds
  •  1 garlic clove
  • ½ cup extra virgin olive oil
  • 1 tbsp red wine vinegar
  • ¼ cup grated parmesan cheese

Pesto Caprese Salad Feu D


In the bowl of a blender, add the basil leaves, then pumpkin seeds and garlic. Drizzle in the oil and vinegar. Pulse to combine the ingredients, scrape down the bowl using a spatula, then blend until well combined and all the ingredients are well pulverized. Pour into a serving bowl and stir in the parmesan.

Slice the tomatoes and mozzarella into thick rounds. Place alternating the tomatoes and cheese on a serving platter. Drizzle with pesto and garnish with fresh basil leaves. Serve with additional pesto on the side for serving.

This salad is best the day it's served but will store for up to 3 days in an airtight container in the fridge. The pesto will store in an airtight container on its own for 2 weeks.
